10-Minute Scallion Oil Noodles for Busy Mornings

Very classic Chinese recipe, but tastes more than you can imagine. Boil your favorite noodles for about 5 minutes—check the package for exact measurements, but I usually go with 100g per serving. While noodles cook, heat 2 tablespoons of oil in a pan and toss in a big handful of chopped scallions. Let them sizzle until fragrant and just golden. Drain the noodles and toss them right into the pan. Add 1 tablespoon soy sauce, 1 teaspoon sugar, and a splash of noodle water. Mix it all up until the noodles are glossy and coated. Serve hot!
