why did my cilantro turn into a 3-foot jungle overnight?

Last week, I walked into my backyard and nearly tripped over my cilantro. It was towering at three feet tall, looking more like a wild weed than the cute herb I planted. Turns out, cilantro bolts fast when it gets too much sun and not enough picking. I always thought more sun meant happier plants, but this one just wanted to flower and show off. Now, I snip the leaves often and give it some afternoon shade. My salads are loving the fresh flavor, and my kitchen windowsill looks way less like a forest.
