Last weekend, I went to check on my little veggie patch and, no joke, I found two potatoes hiding under one plant. I was so pumped, I almost dropped my trowel. Growing potatoes always felt like a mystery to me, but I realized if you just keep the soil loose and toss on a bit more dirt as the plants grow, they really do their thing. I used an old laundry basket for this batch, and it worked way better than I expected. The drainage was perfect, and harvesting was a breeze—just tipped it over and there they were. Seeing those potatoes made all the watering and waiting totally worth it.
