Steam Rising, Noodles Twirling, What’s in This Bowl?

Ramen bowls are a whole universe. The one I tried last week had this deep, cloudy broth—porky, rich, almost buttery. Noodles were springy, just the right chew. Toppings? Eggs, flat beans, scallions, and a slab of chashu pork that basically melted away. I sat besides the table, jet-lagged from a long flight, and just zoned out into the bowl.
