Hi, friends 👋 Continue my $41 dinner challenge, and this one feels extra cozy. We’re making a chicken pot roast in the crockpot—a smart spin on the classic beef version that saves big and still tastes amazing. I used: 4 chicken thighs (saved 2 for later) 4 whole carrots, chopped Red potatoes, cubed A quartered yellow onion Half a cup of frozen peas One packet of pot roast seasoning Salt & pepper A splash of water Just toss it all into the crockpot, set it on high, and let the magic happen. A few hours later, the chicken is fall-apart tender, and the veggies soak up all that savory flavor. I had a few slices of that bakery French bread left from yesterday’s tuna melts—perfect for dipping into the broth. Total comfort food. Even though meat is lighter tonight, the veggie load is hefty, and it balances out beautifully across the week.
