Chicken tikka masala used to be my go-to, but these days, I’m not even pretending to chase that full-on restaurant flavor. I’ve swapped out the heavy cream for Greek yogurt, dialed back the chili, and honestly, sometimes I just use whatever blend of spices I can find in the pantry.
