CHOCOLATE CHIP COOKIES 🍪✨

Swipe right to see how these turn out 👀 I’ve been making these for years - it’s my go-to recipe. There are a few key tips for this recipe which I’ve outlined in the method. Here's what you'll need: - 280g plain flour - 1/4 tsp salt - 2 tsp cornflour - 1 flat tsp bicarbonate soda - 200g light brown sugar - 100g caster sugar - 1 medium egg - 200g butter - 2 tsp vanilla extract - 250g chocolate chips or chopped up chocolate Method: 1. Combine the flour, salt, cornflour, and bicarbonate soda in a mixing bowl. 2. Melt the butter in the microwave until just melted, then leave to cool slightly. 3. Add the sugar to the melted butter and whisk until well combined. 4. Add the vanilla extract and egg to the butter-sugar mixture and whisk again. 5. Mix the wet ingredients into the dry ingredients until well combined. 6. If the dough is warm, let it cool slightly, then add the chocolate chips. 7. Scoop the dough into large ice cream scoop-sized balls and place them on a cling film-lined plate. 8. Cover the dough balls and let them chill in the fridge for 1-2 hours or in the freezer for 20 minutes. 9. Preheat the oven to 180 degrees Celsius fan. 10. Transfer the chilled dough balls to a baking paper-lined tray, leaving plenty of space between them as they will spread during baking. 11. Bake for approximately 9-12 minutes, banging the tray halfway through cooking on a hard surface. (9 minutes will result in gooey cookies, 12 minutes will make them more set.) 12. Let the cookies cool before enjoying! Additional Tips: - You can customize these cookies by substituting the milk chocolate with half & half milk/white chocolate or just white chocolate. You can also add 30g of mini marshmallows to create the s'mores version. - These cookies freeze perfectly for up to 3 months. Portion out the raw dough into balls, chill, and place them in a ziplock bag. When ready to bake, add an additional 2-3 minutes to the baking time.
