Always wondered if these little guys were worth keeping. Turns out bluegill might be the best tasting panfish out there! Sweet, delicate flavor with flaky white meat that's absolutely perfect fried up. Game changer tip from my grandpa: soak the fillets in buttermilk before breading. Totally eliminates any muddy taste and makes the meat super tender. Fry them in peanut oil until golden and crispy - pure heaven with some hushpuppies and coleslaw. Who else targets bluegill?
