When mornings feel too early, a breakfast burrito is the thing that gets me moving. Warm, filling, and unbelievably flexible — you can customize it endlessly.
I whisk two eggs with salt and scramble them gently in a buttered pan so they stay soft. In another pan, I brown some breakfast sausage or bacon until crisp. Then I warm a large tortilla, making sure it becomes pliable.
I layer the eggs, sausage, shredded cheddar, and a spoonful of salsa in the center. For extra flavor, I sometimes add diced bell peppers or a few spoonfuls of sautéed onions. Then I fold the tortilla tightly like a little package and give it a light toast in the pan so the outside becomes golden.
