Staring at a plate that cost less than a dollar, there’s a weird sense of pride. Ham, cheddar & broccoli muffin—dense, savory, and just the right amount of cheese. Then, rice with ham and mixed veggies, plus a soft egg on top. The egg’s yolk runs a little, mixing with the rice, and that’s always the best part. The spaghetti squash is sweet and stringy, totally different from the roasted veggie & feta fritters, which are crispy and salty, with that feta tang. Each bite is a surprise. Not everything on the plate is perfect, but that’s kind of the point. It’s all about making the most out of what’s there. The ham in the rice isn’t fancy, but it’s filling. The muffin is a little crumbly, but it’s got flavor. Fritters could be crispier, but the feta saves them. There’s a sense of accomplishment when the plate’s empty.
