For a grater, rest one end on a cutting board to keep it steady. Drag the orange across the grater from top to bottom, just enough to get the colorful outer layer. Avoid the white pith—it’s bitter and not what you want in your dish. Rotate the orange as you go, zesting each spot only once or twice. If you see white, move to a new section.
