Pomelo Peeling Made Simple

Start by slicing a cap off one end of the pomelo, about half an inch deep. Make vertical cuts down the sides, just deep enough to get through the thick rind. Use your fingers to pull each rind section away. It’s oddly satisfying—almost like peeling styrofoam. Once the rind is off, you’ll see a white membrane. Find the dimple at the end, stick your fingers in, and gently pry the fruit apart into slices. Remove the bitter membrane from each slice. It’s easier if you cut along the center and ends, leaving just the juicy flesh. You can toss the rind in your compost or try candying it.
