For garlic, I’ve started paying attention to where it’s from—domestic garlic tends to be stronger, with a bit more bite, while the imported stuff is milder. If you’re looking for the good stuff, check for stems and a little dirt. The white, stemless bulbs are usually from China and a bit less punchy.
