Costco beef dilemma: to portion or not?

Bought this huge pack of beef chunks from Costco and I'm completely lost on how to divide it! Using plastic wrap for single portions but it feels so inefficient? 😓 And what's with the red outside but dark inside—is that normal or should I be worried?? Costco #MealPrep #FoodStorageHacks
