Check the rind. Deep color and a glossy finish are good signs. If the skin is scratched easily and the shape is a bit squared off (not round), you’ve got a ripe one. Avoid any with soft spots or cracks unless you’re using them right away. Cracks mean super ripe, but they don’t last long. To get the seeds out, quarter the fruit and dunk it in a bowl of water. The seeds sink, the membrane floats—easy cleanup and less mess. Store whole pomegranates in the fridge for up to two months. Seeds last five days in the fridge or up to a year in the freezer if they’re dry. I always flash freeze them first for best results.
