Grilled Veggie Flatbreads That Changed My Summer BBQ Game

Last weekend, I tried something different on the grill—veggie flatbreads. It’s way easier than it sounds. I just sliced up zucchini, red onion, and bell peppers, tossed them in olive oil, salt, and pepper, and threw them on the grill until they had some nice char. While those cooked, I brushed naan bread with garlic oil and grilled it for a minute or two on each side. Once the veggies were done, I piled them on the naan, added a sprinkle of feta, and let it all warm up for another minute on the grill. The smoky flavor from the grill really made the veggies pop, and the naan got crispy around the edges. If you want to switch it up, you can use any veggies you have around, or even add a little pesto or balsamic glaze on top. It’s a good way to use up produce and keep the oven off when it’s blazing hot outside.
