If you’re tired of your burgers puffing up in the middle, here’s what actually works for me: Shape your patties a little wider than your buns, since they’ll shrink as they cook. Press a deep dimple in the center of each raw patty with your thumb—don’t be shy, go about a third of the way through. Grill or cook as usual, and resist smashing them with a spatula after they hit the heat (unless you’re making smash burgers). Let them rest for a minute before serving to keep those juices in.
