After a month of eating out way too much and grabbing greasy takeout on busy nights, it was time to switch things up. Lately, I’ve been making a simple salmon rice bowl that’s light but still filling. I start with a bed of jasmine rice (sometimes I swap in cauliflower rice if I want it even lighter), then top it with baked salmon. I season the salmon with a little olive oil, lemon, garlic powder, and dill before popping it in the oven for about 15 minutes. While the salmon cooks, I chop up cucumbers, cherry tomatoes, and a bit of red onion. Sometimes I’ll add avocado if I have it. Everything gets tossed together with a squeeze of lemon and a sprinkle of salt. Once the salmon’s done, I flake it over the veggies and rice, then drizzle a little Greek yogurt mixed with lemon juice and dill on top.
