Swapping Out Heavy Dinners for This Refreshing Salmon Bowl
After a month of eating out way too much and grabbing greasy takeout on busy nights, it was time to switch things up. Lately, I’ve been making a simple salmon rice bowl that’s light but still filling. I start with a bed of jasmine rice (sometimes I swap in cauliflower rice if I want it even lighter), then top it with baked salmon. I season the salmon with a little olive oil, lemon, garlic powder, and dill before popping it in the oven for about 15 minutes.
While the salmon cooks, I chop up cucumbers, cherry tomatoes, and a bit of red onion. Sometimes I’ll add avocado if I have it. Everything gets tossed together with a squeeze of lemon and a sprinkle of salt. Once the salmon’s done, I flake it over the veggies and rice, then drizzle a little Greek yogurt mixed with lemon juice and dill on top. It’s super easy, doesn’t leave you feeling sluggish, and you can prep the veggies ahead of time. I’ve found this is a good way to reset after too many heavy meals.
