For the fries, I went with hand-cut russets—soaked them in cold water, dried, and fried twice for that extra crisp. The gravy was a quick stovetop mix with chicken stock, butter, and a bit of flour. Layered everything up: fries, cheese curds, hot gravy, and big chunks of fried chicken. The cheese curds melt just enough from the heat. If you want the chicken to stay crispy, add it last and pour the gravy around, not over.
