You do not want to live those first years eating ramen because your mortgage is demanding gourmet funds. Be smart, and realistic – save yourself the pain. Keep checking interest rates coz they can change faster than the weather, and guess what? You don’t have to go with the first lender who makes it sound all pretty. Take your time, ask questions, and if you're confused - which you totally will be - call a friend who's done it before.
