The “I’m Too Tired to Cook” Dinner
There are nights when cooking feels like climbing Everest. You’re starving, you open the fridge, and nothing looks good. That’s when I make what I call “lazy man’s dinner.”
Grab a can of chickpeas, rinse them, throw them in a pan with olive oil, garlic, and whatever leftover veggies are dying in the fridge. I crack two eggs on top, cover the lid for 3 minutes. Done.
It’s not Instagram-pretty. My wife calls it “college food 2.0.” But honestly? It saves me from dialing pizza for the third time in a week.
Funny part is—every time I make this, I feel like I cheated the system. Ten minutes, cheap, filling, and I don’t wake up hating myself.
