Instead of tossing them, I usually cut off the sprouts and any green spots, then peel them well. Last week, I made a simple potato hash. I diced the potatoes into small cubes, soaked them in cold water for about 10 minutes to get rid of excess starch, then dried them off. Into a hot skillet with a bit of oil, I tossed in the potatoes, some chopped onions, and a sprinkle of smoked paprika. Letting them sit undisturbed for a few minutes helps get that crispy edge. Once golden, I added a handful of chopped parsley and a pinch of salt. They turned out crisp on the outside and tender inside. Sprouted potatoes work fine as long as you trim them well and cook them thoroughly.
