Sweet Potato & Black Bean Tacos That Make Weeknights Fun
Weeknights can be dull, but these sweet potato and black bean tacos always bring a spark. The sweetness of roasted sweet potatoes combined with earthy black beans creates a filling, comforting meal.
I peel and dice two medium sweet potatoes, toss them with olive oil, cumin, paprika, salt, and pepper, and roast at 425°F for about 25 minutes until caramelized. Meanwhile, I heat a can of black beans in a small pot, stirring in a pinch of chili powder and a dash of lime juice.
I warm small corn tortillas on a skillet, then layer the sweet potatoes and beans. Toppings are simple but important: fresh cilantro, diced red onion, and a drizzle of sour cream. Each bite is a little sweet, a little spicy, and perfectly balanced.
They’re easy to make, healthy, and everyone in my house loves them. Plus, the colors on the plate instantly brighten the mood.
