CHOCOLATE CHIP COOKIES 🍪✨

Swipe right to see how these turn out 👀 I’ve been making these for years - it’s my go-to recipe. There are a few key tips for this recipe which I’ve outlined in the method. Here's what you'll need: - 280g plain flour - 1/4 tsp salt - 2 tsp cornflour - 1 flat tsp bicarbonate soda - 200g light brown sugar - 100g caster sugar - 1 medium egg - 200g butter - 2 tsp vanilla extract - 250g chocolate chips or chopped up chocolate Method: 1. Combine the flour, salt, cornflour, and bicarbonate soda in a mixing bowl. 2. Melt the butter in the microwave until just melted, then leave to cool slightly. 3. Add the sugar to the melted butter and whisk until well combined. 4. Add the vanilla extract and egg to the butter-sugar mixture and whisk again. 5. Mix the wet ingredients into the dry ingredients until well combined. 6. If the dough is warm, let it cool slightly, then add the chocolate chips. 7. Scoop the dough into large ice cream scoop-sized balls and place them on a cling film-lined plate. 8. Cover the dough balls and let them chill in the fridge for 1-2 hours or in the freezer for 20 minutes. 9. Preheat the oven to 180 degrees Celsius fan. 10. Transfer the chilled dough balls to a baking paper-lined tray, leaving plenty of space between them as they will spread during baking. 11. Bake for approximately 9-12 minutes, banging the tray halfway through cooking on a hard surface. (9 minutes will result in gooey cookies, 12 minutes will make them more set.) 12. Let the cookies cool before enjoying! Additional Tips: - You can customize these cookies by substituting the milk chocolate with half & half milk/white chocolate or just white chocolate. You can also add 30g of mini marshmallows to create the s'mores version. - These cookies freeze perfectly for up to 3 months. Portion out the raw dough into balls, chill, and place them in a ziplock bag. When ready to bake, add an additional 2-3 minutes to the baking time. 🍯 SEA SALTED MILLIONAIRE’S COOKIE CUPS RECIPE 🍯

🍯 Try making these delicious Sea Salted Millionaire's Cookie Cups with this easy recipe! 🍪🥛 Here's what you'll need: - 275g plain flour - 1 tsp bicarbonate of soda - 1 tbsp cornflour - 175g unsalted butter - 135g light brown soft sugar - 195g granulated sugar - 1 egg - 1 tsp vanilla extract - 200g milk chocolate chips - 80ml double cream - 2 tsp sea salt from Yorkshire Sea Salt - 130g milk chocolate Steps to make these yummy treats: 1️⃣ Preheat your oven to 180°C/160°C fan and grease 12 holes on a cupcake tin. 2️⃣ In a medium bowl, mix together the flour, bicarbonate of soda, cornflour, and half a teaspoon of salt. Set aside. 3️⃣ Melt 115g of butter in a large bowl and whisk in the light brown sugar and 55g of granulated sugar until dissolved. 4️⃣ Add the egg and vanilla to the mixture, and whisk until smooth. Then, mix in the dry ingredients and chocolate chips to form a dough. 5️⃣ Roll the dough into balls and flatten them into discs. Gently press the discs into the cupcake tin cavities. Chill in the fridge for 20 minutes. 6️⃣ Bake the cookie cups for 12-14 minutes. If they puff up, use something with a small cylindrical base to push them back down (like a shot glass). Leave them in the tin for 10 minutes, then remove to cool completely. 7️⃣ To make the caramel, heat the remaining granulated sugar in a saucepan over medium heat, constantly stirring. Add in the remaining butter and stir to combine. Pour in the double cream and stir, then add the sea salt and 3 teaspoons of water. Mix well! 8️⃣ Let the caramel cool slightly, then fill the wells of your cooled cookie cups. Allow it to set. 9️⃣ Melt the milk chocolate, then spoon puddles on top of each set caramel pool. Finally, crush some extra sea salt and sprinkle it on top of each cup. Allow them to set. Belgian Handmade Chocolates that you don’t wanna miss in Walnut Creek🍫

This classic chocolate store situated on Walnut Creek Pedestrian Street has a well-established and deep-rooted customer base. Despite changes in neighboring shops due to the pandemic these past few years, it stands firm with no one complaining about the $56/lb price! I was drawn to this store due to its specialization in Leonidas, a famous Belgian handmade chocolate. They are air-shipped to assure freshness, with new batches coming in every 14 days. The store sells only this brand year-round, with unsold chocolates resulting in significant waste. Today's visit featured the Truffe truffle series, see picture 4 for the four flavors! Langlaise chocolates lean towards the sweeter side, but the Truffe series has a higher cocoa content, making it less sweet and more suitable for Asian taste buds. Having tried it, it's truly impressive. It has a hardened exterior, a soft core, melts quickly, and the aroma instantly explodes in the mouth. Also noteworthy is the Marzipan, see pictures 5/6. At first, I thought it was liquor-filled, it's so colorful and tempting! The shop explained that it's a special sweet treat from southern Italy, when translated it is called almond paste, a paste-like dessert from almond kernels and sugar which is highly sweet, a great choice for sweet lovers!
