Soft & Tender No-Knead Flatbread

This is a recipe for a lazy person's soft steamed bun that doesn't require kneading or rolling. It's as soft as you want it to be when it comes out of the pot, and the plain flavor allows you to taste the rich aroma of the flour. For one pound of flour, add a little less than a tablespoon of sugar to promote fermentation. Add a small packet of yeast (6g) to one pound of flour. In summer, use 380 grams of room temperature water to mix the dough. The dough has a high water content and doesn't need to be kneaded by hand. Stir it with a chopstick until it becomes a thick batter without any lumps. Cover it and let it rise until it doubles in size. The risen dough doesn't need to be kneaded or have air bubbles removed. Grease a board and pour the dough onto it. Wear gloves and divide it into 7 to 8 equal parts. Let it rest for about ten minutes, then use a spatula to transfer the dough to a preheated pan. Cover the pan and cook over medium heat. Before flipping, drizzle a little cooking oil. Keep the lid on throughout the cooking process. The buns are super soft when they are golden brown on both sides and can bounce back when pressed. The whole process takes about 4 to 5 minutes.
