Roasting Bunashimeji Mushrooms for That Perfect Crunch 🍄

Tried roasting bunashimeji mushrooms last night and was surprised by how much texture they added to my meal. I just trimmed the base, separated them into bite-sized pieces, tossed them with olive oil, salt, and pepper, then spread them on a hot baking sheet at 475°F. After 20 minutes in the oven, with a couple of stirs in between, they came out golden and still a bit crunchy. These mushrooms hold up well and don’t get mushy, which is great for mixing into rice or pasta. They also soak up flavors nicely—added a splash of soy sauce for an extra kick.
