Use a small, sharp knife for control. For the oven, place the plums cut-side up directly on the oven rack. Set the oven to 200°F (or as low as your oven goes). Flip them every few hours and check for your preferred texture. Usually, it takes about 8 hours. For a dehydrator, arrange the plum halves on the tray, not touching. Set it to 115°F (or 145°F for Excalibur). Check and turn every 4-6 hours. Full dehydration takes around 14 hours. Store your prunes in an airtight container in a cool, dark place. They’ll last up to a year in the pantry or fridge, and even longer in the freezer.
