At first I felt cheated—like, where’s the giant pile of toppings? But one bite shut me up. Juicy, smoky carne asada, fresh herbs, the tang of lime—it didn’t need anything else.
That’s when I realized: what we call “Mexican food” in the U.S. is really just American comfort food wearing a sombrero. The real thing? It’s humbler, sharper, way more honest.
