Always cover tofu with filtered water in the container—this keeps it from drying out. Change the water every day to keep things fresh. If you’ve cooked or flavored your tofu, just store it in an airtight container without water. For long-term storage, toss unopened tofu straight into the freezer. Opened tofu can be frozen too—just drain it first and use a freezer bag. Watch for spoilage: tofu should stay white and smell neutral. If it turns beige or sour, toss it.
