Saffron has always been this mysterious, almost mythical spice in my mind. Finally splurged on the high-grade stuff and tried it straight up—totally not what I pictured. I thought it’d be floral or sweet, maybe even fruity, but it’s got this subtle, earthy, almost hay-like taste. Now I realize I’ve tasted it in paella and Persian rice before, just never knew what it was. The flavor is mild but unmistakable. Still not sure if I love it, but it’s definitely unforgettable.
