Lemon Garlic Chicken Meets Homemade Yellow Rice
Marinate chicken thighs in lemon juice, minced garlic, olive oil, salt, and pepper for at least 30 minutes. The longer, the better for flavor.
Sear the chicken in a hot skillet until golden on both sides, then finish in the oven until cooked through.
For the yellow rice, sauté onion and garlic in a little oil, add turmeric and a pinch of cumin, then stir in rinsed rice.
Pour in chicken broth, bring to a boil, then cover and simmer until the rice is fluffy and vibrant.
Serve the juicy chicken over the rice, and squeeze a little extra lemon on top. The combo is just unbeatable for a weeknight dinner.
