Every time I see someone recommend using just egg whites, I wonder what happens to all the leftover yolks. I get that egg whites are lower in calories, but separating eggs always leaves me with a bowl of yolks I don’t want to waste. I’ve seen folks online say they toss them, but that feels wrong. I tried looking up what to do with them, but most answers are just recipes for custards or desserts. Not exactly what I want to whip up on a weekday morning.
