Sometimes I feel like I need to eat more veggies! Then I do this!

Sometimes I just crave a big pan of roasted vegetables. Even though meat is usually on the menu, there’s something about tossing together bell peppers, zucchini, onions, and carrots with olive oil, garlic, and smoked paprika. I’ll spread everything out on a baking sheet and roast it at 425°F until the edges start to caramelize. The aroma is wild. I’ve noticed the spices and veggies really do all the heavy lifting when it comes to flavor. Sometimes I’ll add chickpeas or tofu for a little extra texture, but honestly, the vegetables are the main event.
