Popcorn can be a healthy snack! If you put in the effort.

Tried something new with glass gem corn recently. After blanching the cobs for a few minutes, I cooled them in ice water and cut off the kernels. Dehydrating them took a good 13 hours, but the result was worth it for the crunch. For popcorn, I used coconut oil in a saucepan, tossed in a handful of kernels, and let them pop with the lid slightly ajar. The colors don’t stick around after popping, but the taste is solid. When I wanted cornmeal, I ran the dried kernels through a strong blender until it looked like sand. Storing both the popcorn and cornmeal in airtight jars keeps them fresh for ages.
