Egg Sandwiches: The Easiest Way to Power Up Your Morning

Crack two eggs into a bowl, whisk them up, and season with a pinch of salt and pepper. Heat a nonstick skillet over medium heat, add a dab of butter, and pour in the eggs. Let them cook until just set, flipping if you like your eggs over-easy. Toast your favorite bread—sourdough, whole wheat, or even a bagel. While it’s still warm, layer on a slice of cheese so it gets nice and melty. Slide the cooked eggs onto the bread. If you’re feeling extra, add crispy bacon, avocado, or tomato slices. Top with the other slice of bread, press gently, and dig in! Egg sandwiches are my go-to when I want something quick, filling, and not boring at all.
