Add in your vanilla—scrape a vanilla bean for max flavor or just use 1 tbsp of vanilla extract. Don’t use imitation vanilla, it really makes a difference! Mix in 1/8 tsp of lemon juice or cream of tartar. This step is old-school but gives your syrup a sweeter, smoother finish. Simmer for about 5–10 minutes until it’s syrupy. Let it cool for 5 minutes, then let it steep for an hour at room temp. To serve, mix 1–2 tbsp of your syrup with cold seltzer and ice. Adjust to your sweetness preference. If you want, add a splash of cream or a scoop of vanilla ice cream for that classic float vibe. Store extra syrup in the fridge for up to a week.
