Grab a bag of unsweetened shredded coconut (or fresh coconut if you’re feeling ambitious). Measure out 1 cup of coconut for every 2 cups of milk you want. Boil 2 cups of water per cup of coconut. Pour the hot water over the coconut in your blender. If your blender is small, do this in batches. Blend until the mixture is as smooth as possible. Hold the lid down tight—hot liquids can be wild! Strain the mixture through cheesecloth or a fine-mesh strainer into a bowl. Squeeze out every drop for maximum creaminess. Pour the milk into a jar and refrigerate. The fat will rise to the top, so shake it up before using. This is way fresher and cheaper than canned coconut milk, and you can use it in curries, smoothies, or desserts.
