Cheesy Brussels Sprouts Casserole You’ll Want Every Weeknight

Preheat your oven to 375°F. Start by crisping up 5 slices of bacon in a large ovenproof skillet. Once crispy, transfer the bacon to a paper towel and chop it up when it cools. Discard the bacon fat, then melt 3 tablespoons of butter in the same skillet. Toss in 2 finely chopped shallots and 2 pounds of halved Brussels sprouts. Season with kosher salt and 1/2 teaspoon cayenne pepper. Cook until the sprouts are tender, about 10 minutes. Remove from heat, drizzle 3/4 cup heavy cream over the veggies, and top with 1/2 cup each of shredded Gruyère and sharp white cheddar. Sprinkle on the bacon. Bake until the cheese is bubbly, 12-15 minutes. Broil for a minute if you want a golden top.
