Last night, I made chicken piccata and my family acted like I’d just invented a new cuisine. The truth? I literally just followed the recipe step by step. Browning the chicken, scraping up the fond (that’s the tasty brown bits left in the pan), then adding lemon juice and capers. The only thing I really do on my own is make sure the chicken is patted dry before it hits the pan, so it gets that nice sear. I even had to double-check how to make a roux for the sauce.
