Guess What’s Bubbling in My Louisiana Pot?

If you think you know what’s cooking, let’s see if you can guess the kind! Here’s how I whip up my favorite Louisiana dish: Start by heating a big ol’ pot and tossing in some chopped onions, bell peppers, and celery. Let them get soft and fragrant. Add your protein—sometimes I go with spicy sausage, other times it’s chicken or shrimp. Brown it up real nice. Sprinkle in Cajun seasoning, a little garlic, and a dash of hot sauce. Stir it all together. Pour in chicken broth and let everything simmer until the flavors come together. Sometimes I toss in rice, sometimes I keep it soupy.
