My Boss Quit on My Second Day—Now I'm Doing Her Job?! 😱

I just started my new job this Monday, and today my manager—who was two levels above me—suddenly resigned. Now, out of nowhere, I’m being told to take over all her projects and responsibilities. Honestly, I feel like they knew this was coming and hired me as a backup plan, but it’s so frustrating because she was making way more than I am! I’m really stressed about being thrown into the deep end like this. I want to do a good job, but I also don’t want to be taken advantage of. Should I just keep my head down and do what I can, or is it okay to speak up? If I do, how do I say something without sounding ungrateful or difficult? Quitting isn’t an option for me because jobs in my field are super rare. I’d really appreciate any advice from anyone who’s been in a similar spot.
