Frozen tilapia is always in my freezer for those nights when there’s barely any time to cook. I just mix up a quick blackening seasoning—paprika, garlic powder, a little cayenne, salt, and pepper. The frozen fillets go straight onto a baking sheet, then I rub the seasoning on both sides. Into the oven at 425°F, and they’re ready in about 20 minutes. The edges get a little crispy, which is perfect. Sometimes, I’ll melt some butter until it’s golden brown, squeeze in fresh lemon juice, and pour that over the baked fish. If I want everything in one go, I’ll wrap the tilapia with sliced bell peppers and zucchini in foil packets.
