Did you know you can actually cook green papaya? I make Chicken Tinola all the time because I have a papaya tree that literally grew under an old tire in my backyard! Here’s how I do it: Sauté chopped onion, garlic, and ginger in a big pot until fragrant. Add chicken pieces and brown them a bit. Pour in water, fish sauce, and bay leaf. Let it simmer for about 20 minutes. Toss in sliced green papaya and cook until tender. Add mungalay leaves, chicken bouillon, salt, and pepper. Simmer for a few more minutes. Serve hot over rice!
