Cozy Butternut Squash Soup in rainy days

Making roasted butternut squash soup is actually super simple and it’s one of my favorite comfort foods. Here’s how I do it: Cut a butternut squash in half, scoop out the seeds, and roast it at 400°F for about 40 minutes until it’s soft and caramelized. Scoop out the flesh and toss it in a pot with sautéed onions and garlic. Add a pinch of salt and pepper. Pour in some veggie broth and let it simmer for 10 minutes. Then, blend everything until smooth. Finish with a splash of cream or coconut milk for extra coziness. Top with roasted pepitas or a swirl of yogurt if you want.
