Preheat your oven to 375°F. Start by crisping up 5 slices of bacon in a large ovenproof skillet. Once they're done, set them aside on a paper towel and chop them up when cool. Toss out the bacon fat, then melt 3 tablespoons of butter in the same skillet. Add 2 finely chopped shallots and 2 pounds of halved Brussels sprouts. Season with kosher salt and 1/2 teaspoon cayenne pepper. Cook for about 10 minutes, stirring now and then, until everything is tender. Take the skillet off the heat, pour in 3/4 cup heavy cream, and sprinkle on 1/2 cup each of shredded Gruyère and sharp white cheddar. Top with your chopped bacon. Bake for 12-15 minutes until the cheese is bubbly. Broil for a minute if you want that golden top.
