Bring a big pot of water to a boil and toss in a pinch of salt. Drop your wheat or egg noodles in once the water’s rolling—never before, or you’ll get mushy noodles. Boil until they’re tender but still have a bite (al dente). Test by tasting or tossing one at the wall—if it sticks, it’s done! Drain and toss with a little olive oil to keep them from sticking. Serve with butter and cheese for a quick fix, or go all out with your favorite sauce. Noodles are also awesome in soups and casseroles.
