We’ve all been there—eating another sad salad at our desks while pretending to work. It’s depressing. So I started making mason jar salads. But here’s the twist: I don’t put lettuce on the bottom. I layer roasted sweet potato, black beans, corn, salsa, and THEN greens on top. Flip it into a bowl and it looks like Chipotle made it. Coworkers always ask where I ordered it from.
