I used to think vegetarian food meant bland salads. Then I tried falafel in a little Middle Eastern café. Crunchy on the outside, warm and herby inside, stuffed in pita with tahini and pickles—it was messy, filling, and surprisingly satisfying. It made me wonder why we think “meat = real food.” Because this? This felt more alive, more flavorful, than most burgers I’ve had.
