Bigger cloves are easier to work with and give you more of that sweet, mellow flavor. Heat about 1/4 inch of olive oil in a skillet over medium heat for a few minutes. Drop the garlic in, then lower the heat to medium-low. Let the garlic cook until the edges turn golden—usually 2-6 minutes. If it starts browning too fast, turn the heat down. Scoop the garlic out with a slotted spoon. Use it right away or store it in the oil in your fridge for up to two weeks. The oil gets infused too, which is awesome for pasta or salad dressings. Peel off the loose, papery layers but keep the head intact. Slice about 1/4 inch off the top of the garlic head to expose the cloves. Set the garlic cut-side up in a muffin tin, drizzle with olive oil, and rub it in. Wrap the garlic in foil and bake for 35 minutes. Check for softness—if it’s not there yet, give it another 5-10 minutes. Let it cool, then squeeze out the sweet, golden cloves. Spread on bread or toss into pasta.
