Grab a fresh head of garlic from your local store or farmer’s market. Preheat your oven to 400°F. Peel off the loose, papery layers but keep the head intact. Slice about 1/4 inch off the top of the garlic head to expose the cloves. Set the garlic cut-side up in a muffin tin, drizzle with olive oil, and rub it in. Wrap the garlic in foil and bake for 35 minutes. Check for softness—if it’s not there yet, give it another 5-10 minutes. Let it cool, then squeeze out the sweet, golden cloves.
